The Best Cobb Salad

Summer is almost here and I like eating lighter and healthier in the summer. My favorite cobb salad is easy to make, especially with these already peeled hard boiled eggs from Great Day Farms. These eggs make my life so much simpler. I do not have to boil or peel eggs ever again. These eggs are perfect for breakfast, snacks, or tossed in a salad for lunch or dinner. This cobb salad is so easy to make. All you need is chopped lettuce, shredded cheese, tomatoes, crumbled bacon, corn, sliced egg and your favorite dressing. I am trying to keep things simple and healthy. Skip the boiling and peeling and make sure you check these already peeled hard boiled eggs out at Walmart in the deli section.

If you have been following the Patricios for a while, you know we love Disneyland. We usually go at least once a month. Each time we go to Disneyland I plan out all of our outfits. It is important to me for us to wear Disney themed clothes when we are in the parks. I don't know why, but I feel like if you go to Disneyland, or anywhere for that matter, you should dress the part.

Why We Love Fancy Nancy On Disney Junior

Last July when Fancy Nancy aired on Disney Junior Kennedy was hooked from the first minute. We immediately went to Barnes and Noble and bought every book we could find. Over the next several months we bought pajamas, costumes, sunglasses, figurines, plush dolls, downloaded the shows on her iPad and more. An Activity My Kids Love That Does Not Involve The TV

We really limit the TV in our house. We usually allow only 30 minutes a day and they have to agree on a show after dinner while Blake and I are cleaning up the kitchen and preparing baths and bed time. But what do we do after school if we don't use the TV or electronics? I am here to share with you the kids' absolute favorite thing to do all day, every day. We even do it together as a family.

Pokemon Detective Pikachu

It has been about a year that Carter has been into Pokemon. Every time we go to Target I am purchasing more and more trading cards, plush dolls, Mega Construx sets, a blanket, poke balls and more. He has been counting down the days until the release of Pokemon Detective Pikachu. We were invited to a few screenings this past week in LA, but unfortunately could not make any of the dates work with our busy schedule. So today (yes, on Mother's Day) I took Carter to see this movie. I had no idea what was going on, but sitting next to Carter watching him smile from ear to ear, shove popcorn in his mouth, and try to explain every detail to me (very loudly) was the highlight of my entire day. It made me so thankful to be his mama! He is just the best boy and was so excited to see this movie.

Pop-Up Disney: A Mickey Celebration

The Pop-Up Disney: A Mickey Celebration opened on Friday, April 26th. We visited the pop-up over the weekend. If you know me, you know I live for a good pop-up! We have visited the LA and SF Ice Cream Museums, The Color Factory in SF, Fa La Land in LA, and Candytopia in Santa Monica. They are just so fun, the kids have the best time, and it makes for some great photos. I was so excited to visit Pop-Up Disney because you know how much we LOVE Disney and it seriously was the best time ever and I want to share with you why you need to go!

LEGOLAND CALIFORNIA RESORT DUPLO PLAYTOWN OPENS!

DUPLO Playtown is now open at LEGOLAND California and it is brand new and in a re-imagined location! We celebrated and explored the colorful, interactive play structures that make up DUPLO Playtown, along with experiencing the new LEGOLAND Express Train Ride. Teacher Appreciation Week

National Teacher Appreciation Day is May 7th, but at Carter's school we celebrate for a whole week (April 29th through May 3rd). Carter's teacher and aides are amazing, and as room mom I knew I wanted to spoil them and make them feel extra special all week long. Plus, I have been a substitute teacher for 9 years and a lot of my friends are teachers, so I know what they want and don't want when it comes to gifts. No teacher expects any gifts, but it is so nice to make them feel special and tell them thank you for tying my child's shoes a million times each day, helping them wipe or blow their nose, listen to their silly stories, help them put jackets on and off, help them open packages from their lunch, and so much more. The list of things a teacher does all day long goes on and on, and in Carter's class there are 31 kids, so just imagine trying to teach and do all the little things for each student that you do at home for your own children. The work, love, energy and dedication of teachers holds such a special place in my heart. Being a teacher is no joke. God bless all teachers!
