Easy Healthy Chicken Cordon Bleu


This healthy Chicken Cordon Bleu recipe is a family favorite! Stuffed with ham and cheese then breaded and baked in the oven.

Ingredients: chicken breasts, 2 eggs, 1/2cup Italian bread crumbs, 1/4 cup parmesan cheese, slices of ham and slices of swiss cheese (1 each per chicken breast)

Directions: Preheat oven to 450 degrees.  Spray a large non stick backing sheet with cooking spray.  Wash and dry the chicken breasts and lightly pound the chicken to make them thinner.  Lay the chicken on a working surface and place a slice of ham on top of the chicken, then add the cheese, and roll it up and poke it with a toothpick to hold it all together.  Set them aside.  In a medium bowl whisk the egg and in another medium bowl combine the bread crumbs and parmesan cheese.  Dip the rolled chicken into the eggs, then into the breadcrumbs.  Place chicken breasts onto the baking sheet.  Bake for 30 minutes at 450 degrees.
