Sloppy Joe Frito Boats


Who doesn't love a Frito bowl? They are quick, easy and so good to eat. The best part about the mix is you can eat it in a bowl or stuff the mix into some bell peppers and make stuffed peppers. Let me share with you how I make it.

Ingredients:

1 pound ground turkey, 1 cup shredded carrots, 1/2 yellow onion chopped, 2 cloves of garlic, 2 teaspoons ground cumin, 2 teaspoons smoked paprika, 14.5 ounce can of fire roasted tomatoes, 1/2 cup ketchup, 1 tablespoon Dijon mustard, 1 tablespoon light brown sugar, 1 tablespoon apple cider vinegar. You will need 4-6 bell peppers if you chose to use the mix for stuffed peppers. You may also want shredded cheddar cheese and Fritos Scoops.

Directions:

In a large skillet add the ground turkey and cook on medium/high. Once the turkey is completely cooked add the shredded carrots, onion, garlic, cumin, paprika, can of fire roasted tomatoes, ketchup, mustard, brown sugar, and apple cider vinegar. Mix everything and let it simmer for about 10 minutes.

Once it is done just scoop the mix into bowls and add shredded cheese, sour cream, or whatever you fancy. We also love to add Fritos Scoops to our bowls and use them like little spoons to eat the mix.

If you want to make stuffed peppers, preheat your oven to 425 degrees. Clean the bell peppers and slice off the top and clean the inside. Once the mix is completely cooked, add the mix into the bell peppers until full. Add shredded cheese on top and put them in the oven for 20-30 minutes until golden brown and the cheese is all bubbly and melted and the bell peppers are soft. I usually use a 9 x 13" baking dish when I make the bell peppers. Make sure you place the bell peppers in the dish cut side up.
