Maggiano's Rigatoni D Recipe


One of my favorite restaurants is Maggiano's. When Blake and I lived in San Jose we would go to eat there at least once a week. I even had my college graduation party at Maggiano's. The restaurant holds a special place in my heart and a lot of wonderful memories. Over the last several years we found ourselves heading to LA multiple times a month (before the pandemic) and one of our favorite places to stay is The Farmer's Daughter, right across from The Grove (literally walking distance). So several times a month we would walk across and eat at Maggiano's. It has been just about a year since we have eaten there, so I made it my mission to figure out how to make one of my favorite pasta dishes, Rigatoni D. Tonight I am sharing the recipe with you. It is super simple and my entire family loves it! You can also find it on my IG stories under highlights dinner ideas.

Ingredients:
1 box of pasta, 1 tablespoon olive oil, 1/2 yellow onion chopped, 6 cloves minced garlic, 8 ounces sliced fresh mushrooms, 1 chicken breast, 1/2 teaspoon salt, 1/2 teaspoon pepper, 2 cups chicken stock, 1/2 cup Marsala wine, 1 1/2 teaspoons cornstarch, 1 cup heavy cream, 1/4 cup Parmesan cheese, 1 tablespoon butter.

Directions:
Fill a pot with water and 2 cups of chicken stock.  Once the water is boiling add the chicken breast and boil for 30 minutes. After 30 minutes remove the chicken breast (keep the water!), shred it (I use my Kitchen Aid mixer) and add it to a large skillet with 1 tablespoon olive oil, 8 ounces sliced mushrooms, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/2 cup Marsala wine, 1 1/2 teaspoons cornstarch, 1 cup heavy cream and 6 cloves minced garlic.  In the same pot of boiling water that you cooked the chicken breast in add the entire box of pasta noodles.  Cook the pasta for however long you desire (it usually says on the box, but I always cook mine for 10-11 minutes).  The pasta should be cooking in the pot of water that you cooked the chicken in and in the skillet should be all the remaining ingredients on medium/high heat.  Once the pasta is done, drain the water and put your pasta in a serving bowl or return it to the empty pot.  Add the skillet of all the other cooked ingredients to the pasta, add 1/4 cup Parmesan cheese and 1 tablespoon of butter.  Mix everything together and sprinkle more Parmesan cheese per serving if you desire and enjoy!
