This delicious salad I have been making for years and it is a total favorite. It is easy to make and super yummy too.
Ingredients: 1 pound of lean ground beef, 1 taco seasoning packet, 1 head of lettuce (whatever you prefer, but I use red leaf lettuce) chopped, 1 can of kidney beans (drain), 1 can of garbanzo beans (drain), 1 cup of tomatoes chopped, 1 can of corn (drain), 1 cup of shredded cheddar cheese, 1 cup of chopped onion, and Nacho Cheese Doritos on top. Sometimes I add carrots too. Basically, you can add whatever you like in your taco salad.
Directions: Cook the ground beef and add the packet of taco seasoning once meat is browned (mix well). Chop the lettuce and add to a large bowl, add all the ingredients on top of the lettuce, add the meat once it is cooled. I always add the Nacho Cheese Doritos to the very top crunched up. Add however much or little that you like. Just make sure you add the Doritos right before serving so they don't get soggy. Add dressing and serve.
Dressing: 1 1/4 cup of olive oil, 1/2 cup red wine vinegar, 1 tablespoon of mustard, 1 teaspoon of salt, 1/4 cup of sugar (sometimes after mixing the dressing I have to add a little more sugar to taste).
Sometimes I also make this salad and switch out two ingredients. I switch the Nacho Cheese Doritos for Fritos Original Corn Chips and instead of making my own dressing I will pick up some Thousand Island dressing. But the Fritos and Thousand Island dressing go together or the Nacho Cheese Doritos and the homemade dressing go together, in my opinion.
