Minute Instant Rice & Quinoa


With everything we have going on in life it can be hard to find the time to eat well. That is why I love using Minute Instant Rice & Quinoa. All you need is 10 minutes, then you have enough time to enjoy the whole grain deliciousness you crave in your meals. Minute Instant Rice & Quinoa is ready to complement my everyday meals, especially on busy nights when I want to eat well, but get a meal on the table fast. This week I served this Minute Instant Rice Quinoa with a simple chicken piccata. The entire family loved it.


This grain blend is made with a variety of rice and quinoa and that’s it. It's a tasty blend of four whole grain ingredients: brown rice, red rice, wild rice and quinoa. The Minute Instant Rice & Quinoa cooks up light and fluffy, has a slightly chewy, delicious nutty flavor and is ready in just 10 minutes. It comes packed in four convenient pre-portioned two-serving bags and can be prepared on the stove or in the microwave. For the stove just boil some water, add in the rice packets, stir, cover, and let it cook. It really is that easy!

For the chicken piccata, sprinkle chicken breasts with salt and pepper and ¼ tsp garlic powder, then dredge them in the flour. Heat 1 tbsp olive oil in a pan and brown the chicken breasts on both sides. Remove chicken breasts from the pan and add ¼ cup chicken broth, 1 tbsp lemon juice, 4 tbsp of butter or olive oil, and 1 tbsp capers, scraping up the brown bits. Stir in ½ cup heavy cream. Return the chicken to the pan, and simmer until the sauce has reduced and the chicken is cooked through. When the rice is done, I plate the rice and place the chicken on top of the rice and add a drizzle of the piccata sauce right on top of the chicken and rice. I added a green salad and served.

This meal is delicious and ready in minutes. Everyone will think you were in the kitchen for hours cooking the rice and chicken, though all it takes is Minute Instant Rice & Quinoa on the stove top or microwave and cook up a protein like chicken and you are done.
