Easy Greek Salsa Chicken


This Greek Salsa Chicken is out of this world! Probably one of the best meals I have ever made. I am not joking! Here is the recipe.

For the Salsa:
4 ounces crumbled feta cheese
1 cup halved cherry tomatoes
1/4 cup minced fresh parsley
1/4 cup lemon juice
1/4 cup olive oil
1 tablespoon freshly chopped oregano

For the Chicken:
6 boneless chicken breasts (or however many chicken you need - we used 3)
pepper to taste
salt to taste 
2 tablespoons olive oil

Directions:
Preheat oven to 450°.
In a large bowl, combine feta, tomatoes, parsley, lemon juice, olive oil and oregano. Cover and chill in refrigerator.
Heat 2 tablespoons of olive oil in a pan over medium high heat. Season chicken with salt and pepper. Sear chicken, about 1-2 minutes each side; remove from heat.  Transfer chicken to the oven for 25-30 minutes. About 5-10 minutes before you take the chicken out of the oven, put the salsa all over the chicken. Let it cook for another 5-10 minutes until the tomatoes and cheese begin to soften and it's done. You just want to warm the salsa mixture on top of the chicken so the flavors blend together.  You can serve with alone or with rice or pasta.  Enjoy!
