Sesame Chicken Noodles With Peppers


This noodle dish is one of Blake's favorites. It is spicy, but so good!

Ingredients:
2 cups chicken stock, 1 chicken breast (fresh or frozen), 1lb box of noodles (your preference), 2 teaspoons sesame oil, 1/4 cup peanut oil, 1/2 cup tahini, 3 tablespoons soy sauce, 2 tablespoons red wine vinegar, 2 teaspoons chili oil, 1 teaspoon honey, 1/2 teaspoon cayenne pepper, 1 garlic clove, 6 scallions sliced, 1 bell pepper sliced.  You may also want sesame seeds and/or peanuts to add to the top of the noodle dish once it is complete.

Directions:
Fill a large pot full of water and 2 cups of chicken stock and bring to a boil over high heat.  Once the water is boiling add the chicken breast and let it cook for 30 minutes.  Once the chicken is cooked remove the chicken (save the water!) and shred the chicken breast.  In the same water add your box of noodles and cook according to the package directions.  While the noodles are cooking, grill the sliced bell peppers at the same time since this only take a few minutes.  Slice the bell pepper and sauté on a skillet until golden brown.  Once the noodles are cooked drain the water and return the noodles to the pot, add the bell pepper, green scallions, the shredded chicken and sauce (see instructions below) and mix everything together and enjoy! 

Note: When the chicken is cooking this is a good time to cut your 6 green scallions, bell pepper, and make the sauce for the noodles.

Sauce: 
In a bowl add 2 teaspoons sesame oil, 1/4 cup peanut oil, 1/2 cup tahini, 3 tablespoons soy sauce, 2 tablespoons red wine vinegar, 2 teaspoons chili oil, 1 teaspoon honey, 1/2 teaspoon cayenne pepper, 1 garlic clove and mix this all together really well and set aside.
