Chicken Salad Lettuce Wraps



I love making chicken salad. It is so good and the perfect lunch during these warm Spring and Summer months. This salad is always a favorite at a picnic, barbecue, or an office potluck! Just a few ingredients can be transformed into a cold, creamy salad or filling for a homemade chicken salad sandwich or wrap!

Ingredients: 2 boneless skinless chicken breasts, 1 tablespoon olive oil, 2 teaspoons of salt, 1 teaspoon of pepper, 1/2 cup plain whole milk yogurt, 1/4 cup mayonnaise, 2 tablespoons lemon juice, 2 Honeycrisp apples cut into pieces, 1 1/2  cups thinly sliced celery, 1 cup seedless red grapes cut in half, and 12 butter letter leaves from 1 head.

Directions: Preheat oven to 425 degrees.  Place chicken on a baking sheet and drizzle with olive oil. and sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper.  Bake for 25 minutes.  Cool the chicken completely for about 20 minutes.  Shred or slice chicken into bite size pieces.  While chicken is cooking, whisk together yogurt, mayonnaise, lemon juice and remaining 1 teaspoon salt and 1/2 teaspoon pepper until smooth.  Stir in apples, celery, grapes, and chicken.  Spoon salad mixture evenly into lettuce leaves.  You can choose to sprinkle with slivered almonds or walnuts and serve immediately.
