Baked Honey Mustard Chicken


This was so easy and so very good. I served this chicken with a green salad, pasta, and garlic bread. 

Ingredients: 3 tablespoons dijon mustard, 3 tablespoon whole grain mustard, 3 tablespoons honey, 2 tablespoons chicken stock, 1 tablespoon olive oil.

Ingredients for the mustard rub: 1 tablespoon olive oil, 1 tablespoon whole grain mustard, salt and black pepper (to taste), however many chicken breasts you want to cook.

Directions: Preheat oven to 400 degrees. To make the mustard rub, combine olive oil and whole grain mustard in a small bowl; season with salt and pepper, to taste. Using your fingers or a brush, work the mustard rub onto both sides of the chicken. In a large bowl, whisk together dijon mustard, whole grain mustard, honey, and chicken stock. Heat olive oil in a large skillet over medium high heat. Add chicken and sear both sides until golden brown, about 2-3 minutes per side. Move the chicken into a glass pryex dish and pour the mustard mixture over the chicken. Place into oven and cook for 30 minutes.
