Chicken Lasagna Roll Ups

Tonight I made these chicken lasagna roll ups for dinner. They were amazing! Super simple and super super yummy!  I served them with garlic bread and a green salad. 

1 package of lasagna noodles, 6 oz. cream cheese, 1/2 teaspoon garlic powder, 1 cup shredded mozzarella cheese, 1/2 cup grated parmesan cheese, 1/2 cup milk, 1 chicken breast, 2 tablespoons of fresh chopped parsley, and your favorite marinara sauce.

Preheat oven to 350 degrees. Fill a large pot of water and bring to a boil over high heat.  Once the water is boiling add the chicken breast and let it cook for 30 minutes.  Once the chicken is cooked remove the chicken (save the water) and shred the chicken.  In the same water add your box of lasagna noodles and cook according to the package directions.  Once the noodles are done, drain and pat dry.  In a mixing bowl, beat together the cream cheese, garlic powder, mozzarella cheese, parmesan cheese, milk, chicken and parsley. Spoon some of the sauce on the bottom of a baking dish so that it is completely covered. Spoon some of the mixture and spread on top of each noodle. Tightly roll each noodle up and place seam side down into the baking dish. Cover each roll with more sauce trying to completely cover each one so that they do not dry out while baking. Sprinkle additional parmesan or mozzarella cheese on top. Bake for 30 minutes.
