Chicken Divan


This was Blake's favorite meal growing up. He loved when his mom cooked it. So, I have been determined to make it just like my mother in law, who is an amazing cook. We had this for dinner tonight and Blake said it was just as good, and I would have to agree. It is a simple meal and tastes so good.

Ingredients: 2 (10-ounce) packages of frozen broccoli chopped, 6 cups of shredded chicken cooked, 2 cans of cream of mushroom soup, 1 cup of mayonnaise, 1 cup of sour cream, 1 cup of grated sharp Cheddar, 1 tablespoon of fresh lemon juice, 1 teaspoon of curry powder, salt and pepper, 1/2 cup of dry white wine, 1/2 cup of freshly grated Parmesan, 1/2 cup of bread crumbs, 2 tablespoons of butter, melted.

Directions: Preheat oven to 350 degrees. Add the thawed broccoli into a casserole dish. Add the shredded chicken on top of the broccoli. In a medium bowl, combine the mushroom soup, mayonnaise, sour cream, cheddar cheese, lemon juice, curry powder, salt and pepper (to taste), and wine. Whisk together to make a sauce. Pour the sauce over the broccoli and chicken. Place the mixture into an 11x7" casserole dish or 2 9x9" disposable aluminum foil pans that have been sprayed with vegetable oil cooking spray. Pat down evenly and smooth with a spatula. Combine the Parmesan, bread crumbs and butter and sprinkle over the top. Bake for about 30 to 45 minutes.
